These Soft & Chewy Peanut Butter Cookies will be your new go-to! They are chewy in the centre, crisp around the edges, and have that classic, melt-in-your-mouth peanut butter taste. With only 9 ingredients, these cookies come together quick and easy!
What you will need to make Soft & Chewy Peanut Butter Cookies:
All Purpose Flour
Baking Soda
Salt
Unsalted Butter
Creamy Peanut Butter – I would not recommend using natural peanut butter in these cookies as the oil will change the texture.
Granulated Sugar & Brown Sugar – Brown sugar gives these cookies their soft and chewy texture, while granulated sugar helps them spread and provides a little crispiness around the edges.
1 egg
Vanilla extract
How to make Soft & Chewy Peanut Butter Cookies:
Preheat your oven to 350 degrees F. Line 2 cookie sheets with parchment paper.
In a medium-sized bowl, combine the flour, baking soda and salt. Set aside.
Using a handheld or stand mixer, fitted with a paddle attachment, beat the butter, peanut butter and sugars together until light and fluffy.
Next, add the egg and vanilla extract and mix. Scrape down the sides of the bowl as necessary to make sure everything is incorporated.
With the mixer on low, add the dry ingredients to the wet and mix until combined.
Using a medium cookie scoop, scoop balls of cookie dough and roll them in the extra 1/2 cup of sugar. Then place the balls of cookie dough onto a lined cookie sheet about two inches apart. Using a fork, flatten the cookies slightly.
Bake for about 8-9 minutes or until the edges are golden.
Let the cookies cool on a wire rack.
How to make these Peanut Butter Cookies gluten-free:
To make these cookies gluten-free simply swap the all-purpose flour with equal amounts of a 1 to 1 gluten-free baking flour with xanthan gum.
