Rocky Road Christmas Trees

These Rocky Road Christmas Trees are a super easy, no-bake holiday treat! They come together so quickly and are customizable to whatever your favourite rocky road mix-ins are. They would make perfect gifts for family, friends, or teachers wrapped in a festive treat bag!

No-Bake Holiday Desserts

What you will need to make Rocky Road Christmas Trees:

Your favorite mix-ins – You really can use any mix-ins here. The classic rocky road combo would include something crunchy like cookies or graham crackers, marshmallows, and chocolate. I used pretzels, peanuts, mini marshmallows, and mini eggs. Feel free to get creative, just stick to the ratios I’ve used here so that you have enough chocolate to coat everything!

Milk Chocolate – I used one of those giant chocolate bars! It was 300g and about 1 1/3 cup once melted. Feel free to change up the type of chocolate if you’d like to!

Candy Melts – Melted candy melts are used to drizzle on top of the trees for an extra festive touch. I like the Wilton brand, but any will do.

Holiday sprinkles – For topping your Rocky Road Christmas Trees!

Rocky Road Christmas Trees No-Bake Dessert

How to make Rocky Road Christmas Trees:

In a large bowl, mix mini marshmallows, pretzels, mini eggs, and peanuts.

In a microwave-safe dish, melt the milk chocolate in 30-second increments until smooth. Let cool slightly.

Pour melted chocolate over dry ingredients and mix until everything is coated.

Transfer the rocky road mixture to silicone molds or a lined 8×8” square pan. The Christmas tree mold that I used is by Wilton.

Let rocky road chill in the fridge for 15 minutes until set.

While chilling, melt 1/2 cup of candy melts in a microwave-safe dish. Pour into a piping bag.

Once the rocky road is set, remove it from silicone molds or baking pan. Drizzle melted candy melts over top and top with festive sprinkles!

These Rocky Road Christmas Trees are the perfect no-bake holiday treeat! They come together quickly, require minimal ingredients and are super easy to make.

Ingredients

  • 300g milk chocolate, melted (about 1 1/3 cups once melted)

  • 1 ½ cups mini marshmallows

  • 1 cup pretzels, chopped into small pieces

  • ¾ cup chopped mini eggs

  • 1 cup peanuts

  • 1/2 cup candy melts, melted

  • sprinkles

Directions

  • In a large bowl, mix mini marshmallows, pretzels, mini eggs, and peanuts.
  • Melt milk chocolate in 30-second increments until smooth. Let cool slightly.
  • Pour melted chocolate over dry ingredients and mix until everything is coated.
  • Transfer the rocky road mixture to silicone molds or to a lined 8×8” square pan.
  • Let chill in the fridge for 15 minutes until set.
