These Ice Cream Sandwiches are the perfect summer dessert. Soft and chewy chocolate cookies are sandwiched together with your favourite vanilla ice cream. These Ice Cream Sandwiches are just like the classic ones but elevated with homemade chocolate cookies.
What you will need to make Ice Cream Sandwiches:
Aside from the staples you probably already have in your fridge and pantry, here are a couple of key ingredients you will need.
Cocoa Powder – Cocoa powder gives these cookies a rich chocolatey flavour.
Chocolate Pudding Mix – I love using pudding mix in my cookies to give them a super soft and chewy texture. This comes in handy for these when trying to replicate the soft ice cream sandwich cookies we all know and love. It also adds to the chocolate flavour of the cookies.
How to make Homemade Ice Cream Sandwiches:
Combine the flour, cocoa powder, chocolate pudding mix, baking soda and salt in a medium-sized bowl. Set aside.
Using a handheld or stand mixer, fitted with a paddle attachment, beat the butter and sugars until light and fluffy.
Next, add the eggs and vanilla extract. Scrape down the sides of the bowl to make sure everything is incorporated.
With the mixer on low, add the dry ingredients to the wet and mix until combined.
Using a large cookie scoop like this, scoop balls of cookie dough and place them evenly on a lined cookie sheet. Bake for about 9-10 minutes.
Let them cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.
Scoop one scoop of your favourite vanilla ice cream onto the bottom of one cookie and sandwich a second on top. Repeat with the remaining cookies.
These are best served immediately. If you are making these ahead of time I suggest keeping the cookies in an airtight container and sandwiching them with ice cream right before serving. You can assemble them ahead of time and freeze them, but the cookies will be frozen and harder to bite into!
How to make these ice cream sandwiches gluten-free:
Making these Ice Cream Sandwiches gluten-free is super simple. Just swap out the regular all-purpose flour for a 1 to 1 gluten-free baking flour with xanthem gum. I like this one by Bob’s Red Mill. You will also want to chill the cookie dough for about 30 minutes before baking to avoid the cookies from spreading too much.
