Fun Fiesta Cupcakes – a bright and vibrant set of cupcakes perfect for any Fiesta themed party or summer get together!
This set includes two different designs; a Floral Cupcake and a Fiesta Fan Cupcake. I loved combining the two styles in a set, but each works on their own as well. Feel free to use any colours you’d like! I find Pinterest is a great resource for colour palettes.
What you will need for these Fun Fiesta Cupcakes
Cupcakes or Sugar Cookies – both work well as a base for these designs!
Buttercream – My Perfect Vanilla Buttercream is great for piping and what I used for these cupcakes.
Piping Bags – I like these piping bags the best. For some of the smaller tips used in these designs you will also need couplers.
Piping Tips – For the Floral Cupcake Design you will need Wilton tips 104, 2D and 352. For the Fiesta Fan Cupcake Design, you will need Wilton tip 104. I find it helpful to have more than one of the 104 tip as you will want to use it with a couple different colours. This set has both 104 and 352 tips in it!
Flower Nail – One of the flowers in the flower design is piped on a flower nail and then transferred to the cupcake after chilling. A metal or plastic nail will work!
Food Colouring – My favourite brands of food colouring are the Americolor gels and Wilton’s Colour Right System. Americolor offers a wide variety of beautiful colours and the colour right system comes with 7 different colors and a guide on how to mix them to create endless colour possibilities.
Sprinkles – Not necessary, but I chose to add some to the centre of my flowers and fans! I love the Sweetapolita brand sprinkles, but any pearls like these or sprinkle mix will work.
Prep your Piping Bags
For the Fiesta Fan Design
For this design you will want to use at least two different colours to have the alternating look. I used three different colours – pink, teal and orange.
Fit 2 or more piping bags with pipng tip 104 and fill with different coloured buttercream.
For the Floral Design
For this design, there are two different flower types and the leaves. One flower uses a 2D piping tip (red and yellow) and the other uses the 104 (pink, orange and teal). The leaves use tip 352. I did multiple colours for the flowers and green for the leaves. You can use however many and whatever colours you like!
Flower 1: Fit one or two piping bags with a 2D piping tip and fill each with different colours of buttercream. I chose red and yellow for mine.
Flower 2: Fit one or more piping bags with a 104 piping tip and fill with different coloured buttercream. I chose pink, teal and orange for mine.
Leaves: Fit one piping bag with a 352 piping tip and fill with green buttercream.
How to make Fun Fiesta Cupcakes
Fiesta Fan Design
Step 1: Pipe a ruffled ring around the outside of your cupcake. Hold the piping bag so that the tip lies almost flat against the cupcake and the fat part of tip is toward the centre of the cupcake. To create a more ruffled look, you can move the piping tip back and forth ever so slightly as you pipe.
Step 2: Using a different colour, pipe a second, ruffled ring on the inside of the outer ring. This ring should overlap the outer ring slightly.
Step 3: Using a third colour or the first colour, pipe a centre ring in the middle of the cupcake. Continue piping until no cupcake is seen.
Step 4: Add some sprinkles to the centre.
Floral Design
Step 1: Prep your flower nail with a small dot of buttercream and a parchment square. Using your piping bag fitted with the 104 piping tip, pipe small semi-circular petals to form the first layer of your flower. Hold your piping bag so that the tip is flat against the flower nail, with the fat end of the piping tip toward the centre of the flower. Repeat this for a second layer, overlapping the layer beneath. Place a round sprinkle or pearl in the centre of the flower. Carefully remove the parchment square from the nail and place on a tray to chill. Pipe as many flowers as you need, two for each cupcake, and chill on a tray in the fridge for at least ten minutes.
Step 2: Using the piping bag fitted with the 2D piping tip, pipe two ruffled flowers in opposite corners of the cupcake. Hold the piping bag perpendicular to the cupcake and apply pressure as you move the bag slightly up and down to create the ruffle as you pull it upwards and away from the cupcake.
Step 3: Pipe two small dots of buttercream in the open corners of the cupcake. Using an offset spatula, place your chilled piped flowers in the two spaces.
Step 4: Using your piping bag fitted with piping tip 352, pipe leaves in between the flowers where there is any open space. Hold your piping bag so that the piping tip is parallel to the edge of the cupcake. The open part of the piping tip should be facing outwards and not visible to you when looking at it from above. Apply pressure and slowly release as you pull away from the cupcake.
