Birthday Cake Cookie Sandwiches – Birthday Cake Cookies loaded with sprinkles and white chocolate chips, sandwiched together with Vanilla Buttercream.
These are an ode to one of my favourite bakeries in Winnipeg, Jenna Rae Cakes. I am originally from Winnipeg, and whenever I am home visiting, picking up a few treats from Jenna Rae is usually one of my first orders of business. Quite often, the very first, as their bakery is right on my route home from the airport!
They make super colourful and fun flavoured cupcakes, macarons, cookie sandwiches, you name it. Check out their Instagram for the prettiest feed youβve ever seen. In an attempt to fulfill my cravings while away from home, I decided to come up with my own version of one of my favourite flavours of their cookie sandwich!
What you will need
Unsalted Butter
Granulated Sugar
1 Egg
Vanilla Extract
All-purpose flour
White/Vanilla Cake Mix – I used Duncan Hines French Vanilla Cake mix, but any white or vanilla variety will work.
Baking Soda
Salt
Rainbow Sprinkles – I used rainbow jimmies, but feel free to use any sort of sprinkle blend you have!
White Chocolate Chips
Powdered Sugar
Heavy Cream – Heavy whipping cream is key to a light and fluffy buttercream.
How to Make Birthday Cake Cookie Sandwiches
For the Birthday Cake Cookies
Start by mixing all of your dry ingredients together in a medium sized bowl – all purpose flour, cake mix, baking soda, and salt.
Next up, using your handheld or stand mixer fitted with the paddle attachment, beat your butter and sugar together until light and fluffy. Add in the egg and vanilla. Make sure to scrape down the sides of the bowl to get everything well incorporated.
Slowly add your dry ingredients to the wet until combined.
Add in half of your sprinkles and half of your white chocolate chips and mix just until combined.
Using a medium cookie scoop (1.5 tablespoons), evenly distribute balls of cookie dough on your baking sheet. These cookies spread a bit so make sure to leave at least two inches between them.
Slightly flatten each ball of dough with the palm of your hand.
Sprinkle the tops of the flattened cookie dough with the extra sprinkles and press a few extra white chocolate chips in. This makes each cookie look picture perfect! If you can’t be bothered with this step, just add all of the sprinkles and white chocolate chips into the dough when mixing.
Bake for for about 7-8 minutes at 350 F.
Let your cookies cool on a wire rack while you make your Vanilla Buttercream!
For the Vanilla Buttercream
In the bowl of your stand mixer fitted with the paddle attachment, add your butter. Mix on medium speed until butter is well dispersed throughout the bowl.
On low speed, add powdered sugar one cup at a time. Scrape down the sides of the bowl as necessary.
Once all of the powdered sugar is incorporated with the butter, add the vanilla and whipping cream. Mix on high speed for a few minutes until the buttercream is light and fluffy.
To remove any air bubbles from your buttercream, mix on low speed for a minute or so. You can also do this by hand with a spatula by beating the buttercream against the side of the bowl.

Assembly
Once the cookies are cooled, spread or pipe your buttercream onto the bottom of half of the cookies. I used a 6B piping tip. You can also sprinkle any extra sprinkles you have over the buttercream swirls. Sandwich the rest of the cookies on top!

Ingredients
- For the Cookies
1/2 cup unsalted butter, softened to room temp
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup white cake mix
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sprinkles
1/2 cup white chocolate chips
- For the Buttercream
3/4 cup unsalted butter, room temperature
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
2 tablespoons heavy whipping cream
Directions
- For the Cookies
- Preheat oven to 350Β°F and line cookie sheets with parchment paper.
- In a medium bowl, whisk together all dry ingredients.
- In the bowl of your handheld or stand mixer fitted with the paddle attachment, beat the butter and sugar together until light and fluffy. Add in the egg and vanilla. Make sure to scrape down the sides of the bowl so that everything is well incorporated.
- Slowly add the dry ingredients to the wet, incorporating a little at a time until combined.
- Stir in 1/4 cup of white chocolate chips and 1/4 cup of sprinkles.
- Using a medium cookie scoop, evenly distribute balls of cookie dough onto your cookie sheet about 2 inches apart. These cookies will spread a little bit.
- Flatten each ball of cookie dough with the palm of your hand.
- Sprinkle the tops of the cookie dough with the remaining sprinkles and press in the remaining white chocolate chips.
- Bake for 7-8 minutes.
- Let cool on wire cookie rack.
- For the Buttercream
- In the bowl of your stand mixer fitted with the paddle attachment, add your butter. Mix on medium speed until butter is well dispersed throughout the bowl.
- On low speed, add powdered sugar one cup at a time. Scrape down the sides of the bowl as necessary.
- Once all of the powdered sugar is incorporated with the butter, add the vanilla and whipping cream. Mix on high speed for a few minutes until the buttercream is light and fluffy.
