Easy Chocolate Cupcakes

Easy Chocolate Cupcakes – Super easy moist chocolate cupcakes topped with my Perfect Chocolate Buttercream.

These chocolate cupcakes turn out perfectly every time. I love this recipe because it uses simple everyday ingredients and you only need one bowl!

Ingredients you will need

Like I said, most of these ingredients are everyday items that you probably alredy have on hand!

All Purpose Flour

Cocoa Powder

Granulated Sugar

Baking Powder & Soda

Salt

Eggs

Buttermilk

Oil

Vanilla Extract

Buttermilk – It makes these cupcakes super moist! If you don’t have buttermilk, you can make your own! This recipe calls for a half cup of buttermilk. Add 1/2 tablespoon of lemon juice or vinegar to 1/2 cup of regular milk and let it sit for a few minutes to curdle. Don’t be scared if it seems really clumpy. This substitute works really well and I use it all the time!

Oil – Oil also helps to keep these cupcakes really moist. I like to use vegetable or canola oil.

How to make Easy Chocolate Cupcakes

Sift flour, cocoa powder, sugar, baking soda, baking powder and salt into a large bowl. Whisk all dry ingredients together to combine. I like sifting all the dry ingredients here just to eliminate any clumps and to aid in a light and fluffy texture in the cupcake.

Next, add buttermilk, water and oil and mix until combined. Add eggs and vanilla and mix until full incorporated. The batter will be quite thin, but that is what we want. 

Fill cupcake liners about halfway full. I use a 1.5 tablespoon cookie scoop to measure out batter. I do two scoops per cupcake, so 3 tablespoon of batter each.

Bake for 18-20 minutes. Let cool on wire rack

Once cool, top with a half batch of my Perfect Chocolate Buttercream.

Super moist chocolate cupcakes topped with silky smooth chocolate buttercream. Quick and easy – make these in one bowl!

Ingredients

  • 1 cup all-purpose flour

  • 1/2 cup cocoa powder

  • 1/2 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 cup granulated sugar

  • 1/2 teaspoon salt

  • 2 eggs, beaten

  • 1/2 cup buttermilk

  • 1/2 cup water

  • 1 teaspoon vanilla

  • 2 tablespoons oil

  • 1/2 Recipe of Perfect Chocolate Buttercream

Directions

  • Preheat oven to 350 degrees F. Line cupcake pans with cupcake liners.
  • Sift flour, cocoa powder, sugar, baking soda, baking powder and salt into a large bowl. Whisk all dry ingredients together to combine.
  • Next, add buttermilk, water and oil and mix until combined. Add eggs and vanilla and mix until full incorporated. Batter will be thin.
  • Fill cupcake liners about halfway full. About 3 tablespoons of batter each.
  • Bake for 18-20 minutes. Cupcakes are done when toothpick or cake tester inserted comes out clean. Let cool on wire rack
  • Once cool, top with Perfect Chocolate Buttercream.
