This Harvest Hash is the perfect mix of salty and sweet. You get the saltiness from the bugles and peanuts and the sweetness from the delicious brown sugar coating and Reese’s pieces. It makes for an awesome little gift to pack up and share with friends and family around Thanksgiving and Halloween!
What you will need to make Harvest Hash
1 box of Crispix – Another cereal like Chex could work too! Both of these cereals are great because the candy coating can get in all those little ridges!
1 bag of Bugles – These are super fun in this Halloween/Thanksgiving mix because they kind of look like little cornucopias or witch hats!
1 bag of Reese’s Pieces – The colours of Reese’s PIeces are just perfect for Fall. However, these can definitely be swapped out for another candy-coated kind of chocolate.
1 cup roasted, salted peanuts – Peanuts add some extra crunch and saltiness to this mix.
1/2 cup Salted Butter – Unsalted Butter would also work, but the salted butter just adds to the amazing salty and sweet flavour!
2 cups brown sugar – Brown sugar adds that rich caramel flavour to the candy coating.
1 cup corn syrup – Corn syrup is used in the candy coating. Dark corn syrup would be best as it gives a richer flavour, but you could also use light.
1 1/2 teaspoons vanilla extract
Candy thermometer – You will need a candy thermometer in order to make the candy coating for this Harvest Hash. The candy coating must come to a boil and reach the softball stage, which is about 235-240 degrees F. Don’t be scared of this step! It is really simple and you can find candy thermometers at most homeware or grocery stores.
How to make Harvest Hash
Preheat oven to 250 degrees F. Line two cookie sheets with parchment paper or get a large roasting pan out!
In a large bowl or the roasting pan, combine the Crispix, Bugles and peanuts. Mix together.
In a medium-sized saucepan, combine the butter, brown sugar and corn syrup. Boil until it reaches the soft-ball stage on a candy thermometer.
Remove from the heat and add the vanilla extract in.
Pour the butter and sugar mixture over the Crispix mix and stir thoroughly.
Once fully mixed, transfer to the two large sheet pans lined with parchment paper. If you are mixing everything together in a roasting pan, it is good to go in the oven like that!
Place in the oven for 1 hour, stirring halfway through.
Remove from the oven and let the mix cool. Give it a stir every 15 minutes or so, otherwise, it will all harden together as it cools!
Once the mix has cooled, sprinkle the Reese’s pieces in.
Can I substitute ingredients?
Yes! When it comes to the dry mix, you can definitely substitute or add whatever you like. For example, you could swap the Crispix out for another kind of cereal or the bugles out for pretzels. I have seen candy corn or other Halloween type candy added to Harvest Hash as well! I personally don’t like it, so that’s why I left it out.
How long will this last?
I find this Harvest Hash stays pretty fresh for about 2 weeks when stored in an airtight container. However, this stuff is pretty addicting and never lasts too long in my house!
